Caprese salad is a classic Italian dish that's simple, fresh and perfect for summertime!

Serves: 4 (Light Lunch)

Prep Time: 15 mins 


Ingredients:

  • 4 large tomatoes (1lb, 450g), sliced

  • 1/4 cup of fresh basil, leaves separated

  • 1 ball of fresh mozzarella cheese (120g), sliced

  • 1 large avocado (1 cup, 180g), sliced

  • 2 tbsp of extra virgin olive oil

  • 1 tbsp of balsamic vinegar

  • Salt and pepper, to taste

Instructions:

  1. Assemble, measure, and prepare the ingredients.

  2. In a large platter, layer the ingredients: tomato slice, basil leaf, mozzarella slice, avocado slice, tomato slice, basil leaf, mozzarella slice, avocado slice and so on….

  3. Next in a small bowl, mix the olive oil and balsamic vinegar, season with salt and pepper to taste.

  4. Drizzle the dressing over the salad.

  5. Serve chilled
