Who doesn’t love fried chicken? But what we don’t love is the oil, calories, and saturated fat. Well try these Not-Fried Chicken Burgers; they are fluffy, crunchy and juicy - and we think better than your favorite chicken-shop fried chicken. 

Climate Kitchen Hacks: Our not-fried chicken burgers are cooked in the oven rather than shallow or deep fried. For amazingly crispy, succulent chicken the trick is to use fluffy panko breadcrumbs, to cook on a wire rack in a hot oven, and to use just a light spray of oil to ensure an even cook and stop the breadcrumbs burning. The same serving size has a 20% lower carbon footprint, 35% fewer calories, and up to 55% less fat than shallow fried crispy chicken burgers.

Ingredients:

  • 1/4 cup (30g) all-purpose flour

  • 1 tsp paprika

  • 1 tsp garlic granules

  • Salt and pepper, to taste

  • 1 egg, beaten

  • 1 cup (50g) panko breadcrumbs

  • 1 lb (450g) raw chicken tenders/mini-fillets/goujons (smaller than chicken breasts)

  • 8 sprays canola (rapeseed) oil

  • 4 burger buns

  • Lettuce, tomato, and your favorite burger toppings.

  • A wire rack for cooking

Instructions:

  1. Preheat the fan oven to 430°F / 220°C / Gas mark 7 with a large baking tray inside (for non-fan oven 465°F / 240°C / Gas mark 8).

  2. Assemble, measure, and prepare the ingredients.

  3. In a shallow dish, mix the flour, paprika, garlic granules, and a pinch of salt & pepper.

  4. In another shallow dish, beat the egg.

  5. In a third shallow dish, place the panko breadcrumbs.

  6. Dip each chicken tender into the flour mixture, then the beaten egg, and finally coat it with panko breadcrumbs. Spray both sides of the chicken tenders with canola (rapeseed) oil to lightly coat. Arrange on a wire rack.

  7. Remove the hot baking tray from the oven and place the wire rack with the chicken tenders on the tray. Place in the oven and cook for 15-20 minutes, turning halfway through. Test the least cooked piece of chicken to check if cooked (it should be white in the center when cut in half).

  8. As the chicken cooks, toast the inside of the burger buns on a griddle pan or grill, assemble the burgers with chicken tenders, lettuce, tomato, and your favorite toppings.
