Croquette comes from the French word ‘croquer’ which means to crunch, munch or nibble. Our potato-based take on this French classic has a super crispy outside and a melt in the mouth middle; perfect for crunching, munching, and nibbling.
Climate Kitchen Hacks: We make our croquettes from potato rather than flour because potatoes have two thirds lower calorie content and carbon footprint. We use strong tasting cheese to maximize flavor without adding too much saturated fat. We spray the cooking oil rather than deep or shallow frying and use golden breadcrumbs to absorb less oil whilst still creating that crispy exterior. The same serving size has a 30% lower carbon footprint, 40% fewer calories, and 50% less fat than regular croquette recipes.

Ingredients:
2 large potatoes (2 cups, 450g), peeled and roughly cubed
1 cup (100g) grated Parmesan (or Gruyere, or a blend)
1 egg, beaten
2 tbsp (30g) all-purpose flour
1/2 cup (50g) dry golden breadcrumbs
1 tsp paprika
16 sprays of canola (rapeseed) oil for frying
Assemble, measure, and prepare the ingredients.
Boil the potatoes for 20 minutes until soft. Drain and mash.
In a large bowl, mix the mashed potatoes and grated cheese.
Shape the mixture into 12 small oblong shapes (having 4 flat sides makes the frying easier and requires less oil).
Place the beaten egg in one shallow dish and the flour in another. Place mixed breadcrumbs and paprika in another shallow dish.
Roll the croquettes in flour, then dip them in the beaten egg and finally roll in the breadcrumbs.
Heat a non-stick pan with a couple of sprays of oil and fry the croquettes for 2-3 minutes on each side until crispy. As you turn the croquettes spray the pan with a little extra oil to ensure a hot frying surface.
The croquettes are best served warm straight from the pan. Delicious.
