Waldorf salad is a classic dish whose origins date back over a century, created by the maître d’ at the Waldorf-Astoria hotel in New York. It’s the perfect salad for a light lunch, or as a wholesome side, with a great balance of rich nuts and sweet versus bitter flavors. A delightful tastebud brawl between honey vs vinegar, grapes vs lemons and sultanas vs watercress.

Ingredients:
2 cups (400g) small red apples, finely sliced or diced (skin on)
1 cup (240g) celery, finely sliced or diced
1 cup (200ml) grapes, halved
1 cup (100g) walnuts, roughly chopped
1/4 cup (60g) reduced fat mayonnaise (or vegan option)
1/2 cup (120g) oat-based crème fraiche or yogurt (or soy if you prefer)
1 tbsp honey
1 tsp fresh lemon juice (1/2 a small lemon)
Salt and pepper, to taste
2 tbsp water cress, to serve
2 tbsp sultanas, to serve
Assemble, measure, and prepare the ingredients. After you slice the apple squeeze a little lemon juice over to prevent browning of the flesh.
In a large bowl, combine the diced apples, celery, grapes, and chopped walnuts. Reserve a handful to serve.
In a small bowl, mix the mayonnaise, oat/soy crème fraiche, honey, and half the lemon juice. Season with salt and pepper to taste and add more lemon juice if required.
Pour the dressing over the apple mixture and stir until well combined.
Plate up and sprinkle the reserved salad mix on top (the undressed ingredients look more appealing).
Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
Serve chilled with water cress and sultanas sprinkled over the top.
