Climate Kitchen Hacks: We replace the usual grated cheese with a semi-soft feta - soft cheeses use as little as half the milk in production and also require less aging; that means they generate less than half the carbon emissions of semi-hard cheeses like cheddar or Monterey Jack. The same serving size has a 50% lower carbon footprint, 10% fewer calories, and 35% less fat than comparable hard cheese veggie frittata recipes.

An Italian classic similar to an omelette. Deliciously simple, but packed with flavor; vibrant, earthy fresh beetroot balanced by sumptuous sweet potato and salty Feta cheese - a perfect weeknight sharing dish.

Ingredients:

  • 2 medium sweet potatoes (1 cup, 240g), peeled and diced (½ inch / 1.5cm)

  • 1 cup (240g) raw beet(root), diced (½ inch / 1.5cm)

  • 1 small onion (1/2 cup, 120g), diced (½ inch / 1.5cm)

  • 6 sprays of canola (rapeseed) oil

  • 1/2 tsp dried thyme

  • 6 eggs

  • 1/4 cup (60ml) whole milk

  • Salt and pepper

  • 1/4 cup (60g) feta cheese

  • 1 tbsp fresh mint leaves, chopped

Instructions:

  1. Preheat the oven to 400°F / 200°C / Gas mark 6 (for a non-fan oven 425°F / 220°C / Gas mark 7).

  2. Assemble, measure, and prepare the ingredients.

  3. Place the sweet potato, beetroot, and onion on a baking tray. Spray 4 sprays of oil, sprinkle over the thyme to coat, and roast in the oven for 20-25 mins, until the vegetables start to caramelize on the edges.

  4. Meanwhile in a large bowl, whisk together the eggs, milk, and a pinch of salt and pepper.

  5. Heat a skillet on a low-medium heat with a few sprays of oil. Add the roasted vegetables then pour over the egg mixture and cook for about 5-7 minutes or until the bottom is set (use a low-medium heat to avoid the bottom burning). Note: If you do burn the bottom of the frittata don’t worry  as you can always trim the bottom off before serving.

  6. Crumble on the feta cheese and put the skillet under the broiler/grill for 2-3 minutes or until the top is golden brown and set.

  7. Remove from the broiler/grill, let it cool, sprinkle over the mint and serve.
